Lisa Leann's Cinnamon Rolls

I am reading The Potluck Club right now and inside the book they have a good amount of recipes. I am really excited to try them out! One of the characters manages to join the Potluck club by the power of these Cinnamon Rolls. I was intrigued because Vanilla Ice Cream is one of the ingredients.


How They Rate??
The recipe didn't call for a glaze or frosting on top so I just looked one up real quick. I didn't like it. I need to find a good glaze and they would be a perfect 10. I am giving them a rating of 9.25 (haha because I am specific like that). They are oooey gooey and taste wonderful. They were pretty easy to make too.
Kevin's official rating is a 9.5 He wants to try them with finely chopped walnuts next time.

The Recipe: 
1 cup water, a little warmer than room temperature
1 egg
3 cups Bread Flour
1/4 cup sugar
2 Tbsp Powdered Milk
1 tsp salt
5 Tbsp butter, softened (Mine came straight from the fridge and the dough maker did just fine)
1 tsp instant yeast

1/3 cup butter
1/2 cup Vanilla Ice Cream
1/2 cup brown sugar

1/2 cup butter, softened
1 Tbsp ground cinnamon
1/2 cup brown sugar

Preheat oven to 350 degrees. Put Flour, white sugar, powdered milk, salt, 5 Tbsp butter, water, egg, and yeast into your bread machine. Set machine on the dough setting and turn on. (If you don't have a bread machine, dissolve the yeast in the warm water and start kneading) As the dough mixes(I did this after the dough was done), melt 1/3 cup butter in a small saucepan. Add brown sugar and ice cream and boil for two minutes to create caramel sauce. Pour sauce into bottom of lightly greased 9 x 13 pan.

When the bread machine has finished preparing the dough, place dough onto lightly floured surface. (I sprayed mine with cooking spray instead) With rolling pin, shape dough into a rectangle, then spread with softened butter and sprinkle with cinnamon and brown sugar. Roll rectangle into a "log" then pinch edges to seal. Cut log into 12 rolls. I used dental floss to cut mine. I didn't take any pictures. You slide the floss under the log. Bring both edges straight up, cross them and then pull. It cuts the dough nice instead of the knife flattening the log. Place the rolls in the pan of caramel. Allow dough to rise (about 45 min) until doubled in size.
Bake approximately 20 minutes until golden brown.
This is where the recipe ended. After I pulled them out I could see the caramel sauce in the pan in liquid form and I was worried it would make the rolls soggy. It does thicken as it cools, but I lined a cookie sheet with aluminum foil and put the rolls on that. Then I used a spoon and scooped out a spoonful of sauce for each roll and put that on top and rubbed it around a little.
This recipe doesn't include the frosting, I suppose you could serve it as is, but I will search for a better glaze recipe. I think cream cheese might be over kill with these. I just need something really light.
